I am quite new to MRS, however i think you are missing a few config settings.
1. If the orders are assigned after normal working hours also,splits settings is one of them, which will make your demand after normal working times go to next day (next available slot). Splits also helps when there are breaks for an resource.
2. Check your stretched assignments config.
3. Also you can create collisions if there are overlap of times or if there is over utilization of the resource. This will prevent multiple order assignment at the same intervals.
There might be more configs missings, however these three might help you solve some issues.
